      SENCHA CITRUS SPARKLER

      INGREDIENTS:
      - 1 ½ OZ VODKA
      - ½ OZ SENCHA TEA (BREWED STRONG AND CHILLED)
      - ¾ OZ FRESH LEMON JUICE
      - ½ OZ ORANGE LIQUEUR (E.G., COINTREAU OR TRIPLE SEC)
      - ½ OZ SIMPLE SYRUP
      - PROSECCO
      - LEMON TWIST AND ORANGE WHEEL (FOR GARNISH)

      PREPARATION:
      1. IN A SHAKER, COMBINE VODKA, CHILLED SENCHA TEA, FRESH LEMON JUICE, ORANGE LIQUEUR, AND SIMPLE SYRUP.
      2. ADD ICE AND SHAKE WELL UNTIL CHILLED.
      3. STRAIN INTO A CHILLED FLUTE OR WINE GLASS.
      4. TOP WITH PROSECCO OR CHAMPAGNE.

      In contrast to our loose leaf teas where about 30% to 50% of the beneficial constituents are extracted into the water through multiple steepings, with matcha all of the nutrients are consumed at once as the entire leaf has been powdered and dissolved in water.

      - If you use a chasen (bamboo tea whisk), pour hot water into a bowl and gently warm the tip of the chasen in it.
      - Sift 2g / 1 tsp / 1 ½ heaping teascoop of matcha powder with a fine-mesh strainer over a matcha bowl.
      - Pour boiling water into a separate cup or bowl and let it cool down for a minute (to get to 80°C / 175°F).
      - Gently add a very small amount of hot water into the bowl with matcha and whisk until powder and water are perfectly blended.
      - Add the remaining hot water into the matcha bowl and whisk.
      - When small bubbles start to form whisk the surface of the tea without touching the bottom of the bowl. Continue until matcha has a thick froth with many tiny bubbles.

      Tip: If you have a big matcha bowl, whisk in it directly, otherwise whisk in a big bowl and distribute into cups
